I feel your pain for the lack of beer. Have you tried a different heel – maybe an afterthought? Knit the whole sock as a tube, then add a heel after the fact – I use them, and it fits my husbands ridiculously high arch pretty well. Plus it’s so much less work thatn the flap and gusset style. I have a detailed PDF of how to do it if you want – just email me for it.

I wish I could knit just so I could make these for my homebrewing husband! I can crochet anything–but the only pattern I haven’t been able to follow or adjust to work was a crochet sock pattern
